BEST PIZZA SIDE DISH RECIPIES

Our frozen pizzas are perfect to pull out the freezer for a quick dinner after a busy day. You can pick them up at any health food store such as Choices, Wholefoods, Nesters or at any of our restaurants.

And I have put together a few simple nutricious (full of protein & fibre) side dishes which can be prepared in just a few minutes which perfectly balance pizza.  A Spinach & Chickpea Salad & Roasted Veggie Dish.

SPINACH & CHICKPEA SALAD:

Here is a super delicious quick salad full of protein & fibre from the chickpeas & spinach.

Ingredients:
1 can chickpeas, drained and rinsed (435 g)
2 large handful spinach
3.5 oz feta cheese or similar
1/2 tbsp lemon juice (white or malt vinegar is also good)
1 tbsp honey
4 tbsp olive oil
1 pinch salt
1/2 tsp chili flakes

Instructions:
Chop the cheese and add with the spinach and chickpeas to a large bowl

Mix the honey, oil, lemon juice and raisins in a small bowl

Add the cumin, salt and pepper to the dressing bowl and mix well

Drizzle devilishly delicious dressing over the salad

Serve & Enjoy

ROASTED VEGGIES:

I love roasting cauliflower as it is full of protein & so yummy roasted with carrots & red peppers.

Ingredients:
1 Head of Cauliflower
6 Carrots
2 Roasted Peppers
2 TBSP Olive Oil
1/2 TSP Sea Salt
1/2 TSP Pepper
2 Sprigs Rosemary

Instructions:
Chop cauliflower into florets

Chop zucchini into ½-inch slices

Chop the carrots on the diagonal into ½ inch slices

Place vegetables in a large bowl

Toss with oil, salt and pepper

Transfer vegetables to a large baking sheet

Roast at 350° for 30 minutes

Remove from oven and stir vegetables on baking sheets

Scatter rosemary sprigs over vegetables

Bake for 10 additional minutes

Serve
